I always hate the phrase "do you believe in evolution". Its like saying "do you believe in freedom?" (a concept) or "Do you believe in the theory of relativity" (a theory) or "Do you believe in gravity" (a fact/physical law). Evolution occurs on this planet. Species change and adapt over time. Asking whether I believe in the fact that evolution occurs is an odd question. Perhaps asking "do you think that the theory of evolution fully explains the origin of ALL life on this planet?" is a better question. Of course, that won't fit in the limited question title space.

They are just a theory when you come right down to it. But yes I do believe in it.
What Fiddle said. Also, too many automatically just think of human evolution and the whole Adam & Even/monkey debate when it's brought up. Evolution encompasses way more than just ourselves.

Although curiously, religious people don't seem to have the mental agility to evolve.

Though I hate tree-climbing, and bananas are almost anathema to me right now. Proof of evolution, for me, was in the form of my co-workers back in my days at Soulless Evil, Inc. I think that guy in your pic is one of them.
I don't "believe in" a scientific theory. I think it is more convincing than any other argument I've heard, therefore I BELIEVE it. However, I do not pray to Charles Darwin nor trash those who have different viewpoints.
