Why are cats, dogs, and horses in California more valuable than chickens, pigs, goats, sheep, and bovine (beef and dairy cattle)? In other parts of the world, you can eat from the first list, yet California culture (and law) has forbade it, while eating from the second list is still permissible here. True enough that many cultures around the world protect and "hold sacred" certain species, but why? Should they do it?

Some species should be protected in this way.
No laws against a person eating his/her own livestock.
All animals should be protected. Let the peasants eat vegetables.

only 5% of what a cow eats turns into usable protein.What a waste of resources~
Yes, but a damned tasty waste of resources.

...And so are their cousins, the bison.

Mmm Bison,especially the Catalina Bison.They graze on Island grasses & are delish!
