Including N.Korea, India, Pakistan, Iran, etc...None of these countries are being threatened by anyone (other than the US). So why are they developing nukes. The only explanation is that they are planning to use them....Right?

Have you considered that they may want them as a deterent, the US has nuclear weapons, if the counries being threatened by the US have these too then they are less likely to used against them. They are simply taking measures to protect themselves against an attack.

Well if thats true, what stopped us from invading Iraq? We were convinced they had Weapons of MASS DESTRUCTION!
And I'm sure we'll be in Iran soon. So I think there's a little more to it than that.

National pride, distract the masses. Same reason many middle eastern countries stir up the masses about Israel or any perceived insult to Islam. If you get people all worked up on those things, then they ignore or put the side the real problems their countries face.

With regards to North Korea, one reason is that Kim Jong Il isn't exactly a "man of the people." Clearly he's more preoccupied with himself, his regime, and his country as a whole than the well-being of the citizenry.

I'm certain he's concerned about the possibility of (nuclear) attack on his country. And he understands that North Korea would be effectively destroyed if it started launching nuclear missiles at the world. It's a way of asserting (military) power.
