All those names identify the same animal the Crawfish.Never tried it myself because I'm not a fan of sea food but I heard it's excellent,it's a speciality of the Cajuns.
I guess I worded that wrong. The question should be "How do you say it where you come from?" Depending on where you are from could determine which version of the word that you use.

In Virginia, where I sort of grew uup, it's crawdad. Here in jawja, I'm led to understand that it's mud bug. That name, I fail to grasp.
Corrupt, here in the South, it's the only time you can hear the expression "suck that head" and not be arrested.

Crawfish. We had batter fried crawfish last night at Toby Keith's restuarant--no having to peel it. It tasted like tender, sweet lobster. What an awesome menu! I also had Whiskey Girl Wings and a drink called "Mom's Apple Cobbler".
