My mind must be in the gutter tonight. When I read "head cheese" something completely different came to my mind than what is pictured here.

Is that the same thing as 'souse'? I like souse. It is fascinating to look at, and has a unique, slightly sour taste. Nice with mustard.
Is it related to 'pickled pig's feet'? Those, I do not like. Used to when I was a kid. Now yucko.
