which would help more?

You have $10 to spend on a feel good item.

1. charity. You donate $10 to a charity, they in turn take a fraction of that (after all expenses) to feed a family in Darfur for one day.

2. Free Market Commerce. You buy a item for sale offered by a family in Darfur. They worked hard all day to manufacture a small trinket from pieces of wood and clay, and you purchase that from them for $10, they get $5 (shipping cost $5)

$5 goes a LONG way for a poor family in Africa (avg yearly salary less than $100)

Voted : Free Market Commerce
It appalls me, how much charities trim off donations for "expenses" When I saw how much, I stopped giving for awhile.

more important, how would that family feel, about handed a charity, or an opportunity to work, chance for the "american-ish dream"?

Some charities are bonafide. Check it out before giving.

In this scenario, free market commerce, if only because it may help them much more in the long run if they can make and sell things, so they can be self-sufficient.
