That and accepted rules for what stays, such as a neutral point of view, encouraging the use of references and so forth.
I realize that. but until someone goes in and change it, it stays defaced, right? There must be a lot of people who take their time maintaining that site....

5 pillars: 1. Wikipedia has a code of conduct. 2. Wikipedia is free content that anyone may edit. Articles can be changed by anyone, and no individual owns any specific article 3. Wikipedia works by building consensus. 4. Wikipedia is an encyclopedia written for the benefit of its readers. 5. Wikipedia does not have firm rules besides the five principles outlined here.
^^ well, that is indeed admirable. you seems to know wikipedia pretty well, how do they deal with someone who goes and deface pages for a hobby? let's say an automatic script that goes and defaces 10,000 pages an hour, using variety of proxy servers? (so IP block is not possible)

I think a firewall and other security things like that can help prevent that. Wiki also has numerous people who can and probably have written scripts. There are various scripts used by people on wiki to track changes. You can contact the owners of the proxy servers and let them know their system is being abused.
