FRESH FRUITS AND VEGETABLES ARE EXPENSIVE

What's a person to do?

I try to eat healthy but I don't think I can afford to do that.
I can't believe the high cost fresh produce .

It's really hard for one person to keep food fresh and not waste, because they don't sell a quarter head of lettuce or half of a cucumber.

Veggies and fruits from a can or frozen, I'll eat, but not my favorite thing.

Do you have any helpful hints ?

Produce is very pricey ain't it? That's largely because they have to ship it from God knows where so we can have it year round. My only advice is to grow your favorites in the summer and try to join a local food co-op so what you're getting is not only fresh, but far cheaper. Your other option is to find yourself some good farmer's markets, which again is a seasonal thing. It's always going to be hard to get good produce in the winter, so unless you can your own, you're going to have to deal with that. Or move south...

If you can't eat fresh. Frozen is the next best thing.

This may help you a bit in the vegetable area, but I do not know about the fruit.

Frozen vegetables are frozen immediately after harvesting, I have learned. They are actually retain more vitamins than fresh because fresh fruits have to stored and then shipped and then stored for a while before being brought to market. People handle the fruit also, and it stays for a while on the shelf. My advice would be to get frozen vegetables and only use some of the contents if you do not want to use it all at once.

Fruit is another issue. You can buy that piece by piece if necessary, but that means going to the grocery store a few times a week.

I accidentally used the word fruits (second sentence, last word) in the part of my comment referring just to frozen vegetables. That word should be vegetables.

Some frozen vegetables are better than others - you can also choose the produce that is in season...or that keeps well - winter is a good time for apples and carrots and turnips - we try and buy directly from local producers - my girlfriend's aunt is always canning vegetables and giving away preserves of tomatoes and green beans. In exchange - last weekend I put up shelves for her. I think I got the better of the deal.
