I was introduced to udon while stationed in Japan (in the Military) in the early 1970's. My favorite is nabeyaki Udon with tempura shrimp, fish cake, other vegetables and egg in a light slightly sweet soup...there are other styles of udon but this is my favorite choice... if you haven't tried it try it, trust me, it's very good...
