Cheddar is more tasty. American is more mild, but after growing up eating grilled cheap American cheese sandwiches that my grandmother made, it's hard to stay away from them. When they're good and hot, the cheese melts into the bread a bit more than cheddar. It just seems to add a creamy/cheezy texture to more of the sandwich.

I like Swiss, American, and Munster on mine. Also... It's really good with Rye Bread.
