Voted : See the countryside on horseback I almost did this two years ago. A group of people were going on a trail ride following the old El Camino Real de los Tejas across the state on horseback and wagon.
The only thing that stopped me was not having a horse. My sister-in-law offered to let me use hers, but I didn't want to take that long of a trip on a horse that's not mine.
