I reckon if someone says hello you should always respond

That makes sense. When people don't respond they are just being rude. Personally, after a couple of tries I don't attempt saying hello to these people anymore.

Voted : I say "Hello" if I feel like it.
But it is usually replaced by "good morning" or "good afternoon," etc. I usually reserve a greeting to one per day per person. It is important to acknowledge the presence of others. That having been said, if you or someone else doesn't reciprocate acknowledgement I will probably cease with the formality in that case after a couple of tries to initiate it.

Consider yourself lucky it means people are glad to see you. When I go to work NOBODY says hello or good morning to me.
